Our house runs on Crockpot meals and casseroles. This is one of our favorite casseroles that everyone in our family loves, especially our two year old! It is always in our regular cycle of meals we go through.
This uses a few more dishes then most of my other meals, but while it is in the oven, I have plenty of time to tackle the dishes, leaving me with only a casserole dish to wash and whatever plates we use after dinner is done. One of the reasons I love casseroles!
Now, this recipe calls for potatoes, ground beef, frozen mixed vegetables, tomato soup, water, beef stew seasoning, butter, sour cream, salt, pepper, milk, and shredded Mexican cheese. It all comes together to create one tasty meal!
For most of the meals I make, I use shredded Mexican cheese. It is a cheese I like and it tastes good in most meals. It is easy for me to buy a big bag of it and use it for all of my meals. It also freezes well. At Costco they sell a two pack of two large bags, one I use and the other goes in the freezer. But, you could use any shredded cheese you like or have.
I also make homemade mashed potatoes for this using the potatoes, butter, sour cream, salt, pepper, and milk. However, you could use boxed mashed potatoes or any other mashed potatoes recipe you like.
Let’s get into it!
The first thing you are going to want to do is preheat your oven to 400 degrees. Then add water in a medium saucepan and put on the stove with high heat to begin to boil. Make sure you have enough water to cover the potatoes. Peel and cut potatoes into about 1-inch chunks and add to water. Once the water with the potatoes is boiling, leave on high heat for 20 minutes. Let these boil while you create the beef mixture.
While the potatoes are boiling, add ground beef in a large skillet. You will cook this until the beef is browned.
Next, you will mix in the frozen mixed vegetables, tomato soup, water, and beef stew seasoning mix. You will cook this on medium-high heat until it starts to bubble. Then, reduce heat to low and let simmer for 5-10 minutes, stirring occasionally.
Now, once the potatoes are soft, drain the water. Add the butter, sour cream, salt, pepper, and milk and mix until smooth. I use a hand mixer for this step.
The beef mixture will then get transferred into a 9×13 casserole dish. Then, add the mashed potatoes on top of the beef mixture and top with shredded cheese.
Finally, it goes in your oven uncovered at 400 for 30 minutes and it is time for you to relax (or tackle those dishes!).
After 30 minutes, the cheese should be browned and the rest should be bubbling. All there is left to do is serve and enjoy!
Shepherd’s Pie
Ingredients
- 2 lbs potatoes, peeled and cut into 1-inch chunks
- 1 lb ground beef
- 1 (12 oz) bag of frozen mixed vegetables
- 1 (10.75 oz) can of tomato soup
- ½ cup water
- 1 (1.5 oz) packet of beef stew seasoning mix
- 3 tbsp butter
- ¼ cup sour cream
- Salt to taste
- Pepper to taste
- ¼ cup milk
- 2 cups of shredded Mexican cheese
Directions
- Preheat oven to 400.
