Tater Tot Casserole

Our house runs on Crockpot meals and casseroles. This is one of our favorite casseroles that everyone in our family loves, especially our two year old! It is always in our regular cycle of meals we go through.

I don’t know about you, but I love meals where I can do minimal prep and then throw it in the oven or Crockpot and not worry about it anymore. It basically does the cooking for you. I don’t love standing over a hot stove forever and getting sweaty and smelling like food. I also don’t always have time for that with two young kids running around.

The best part is it only takes a skillet and a casserole dish, no other dishes! Also, while it is in the oven, I have plenty of time to tackle the dishes, leaving me with only a casserole dish to wash and whatever plates we use after dinner is done.

Now, this recipe calls for ground beef, half an onion, Italian seasoning, garlic, Worcestershire sauce, sour cream, cream of mushroom soup, canned corn, shredded cheese, and frozen tater tots. It all comes together to create one tasty meal!

For most of the meals I make, I use shredded Mexican cheese. It is a cheese I like and it tastes good in most meals. It is easy for me to buy a big bag of it and use it for all of my meals. It also freezes well. At Costco they sell a two pack of two large bags, one I use and the other goes in the freezer. But, you could use any shredded cheese you like or have.

Let’s get into it!

The first thing you are going to want to do is preheat your oven to 375 degrees. Then in a large skillet add ground beef and diced onion. You will cook this until the beef is browned and the onion is soft.

Next, you will mix in the Italian seasoning, garlic, and Worcestershire sauce. You will cook this for about a minute.

Then, mix in the sour cream, cream of mushroom soup, and canned corn (make sure you drain it). Cook this for a few minutes until it starts to bubble.

This mixture will then get transferred into a 9×13 casserole dish and topped with shredded cheese. On top of the cheese, line the frozen tater tots covering the whole dish. I end up using about half of a 32 oz bag of frozen tater tots. So, I put the rest back in my freezer and save for the next time I cook this meal!

Finally, it goes in your oven uncovered at 375 for 45 minutes and it is time for you to relax (or tackle those dishes!). 

After 45 minutes, the tots should be crispy and the rest should be bubbling. All there is left to do is serve and enjoy!

Ingredients

  • 1 lb ground beef
  • ½ onion, diced
  • ½ tsp Italian seasoning
  • 3 cloves of garlic, minced
  • 1 tbsp Worcestershire sauce
  • ½ cup sour cream
  • 1 (10.5 oz) can cream of mushroom soup
  • 1 (15.25 oz) can corn, drained
  • about 2 cups shredded Mexican cheese
  • ½ (32 oz) bag frozen tater tots

Directions

  1. Preheat oven to 375.
  2. Add ground beef and diced onion to a large skillet. Cook until ground beef is browned and onions are soft.
  3. Mix in Italian seasoning, garlic, and Worcestershire sauce. Cook for about a minute.
  4. Mix in sour cream, cream of mushroom, and corn. Cook for about two minutes until it starts to bubble.
  5. Transfer mixture to 9×13 casserole dish. Sprinkle shredded cheese on top and line tater tots overtop.
  6. Place in oven uncovered for 45 minutes.
